Cooking with the Caspian Chef!

I wanted to invite you all to a very special event happening this Wednesday, November 1st, at 12 pm CST. I'm going to be doing a LIVE cooking event with Omid Roustaie, aka Caspian Chef, and you are all invited to join and cook with us!

This is the second time we're doing this- last time, Omid taught us how to make khoreshé karafs. This time, he'll be teaching us how to make Kuku Gerdu, a Gilaki kuku I know very little about and Polo ba Tahdig. They can be served with plain yogurt for a light meal.

Like last time, we'll begin the discussion by talking about Persian cooking in general, and then go right into the different techniques and methods of making Persian food in general, and these dishes in particular.

Here's the ingredient list, and the PREP LIST (you should have this prepared before we meet so you can get the most out of the session!):

Shopping list:

  • 2 cups of basmati rice
  • 1 cup walnuts
  • 1/2 cup neutral oil
  • 1/2 teaspoon saffron threads (optional)
  • Salt
  • Pepper
  • Turmeric
  • 5 large eggs
  • 1 medium-sized Yukon gold potato
  • 1 small yellow onion
  • Parsley, 1/2 cup, 1-2 oz
  • Dill, 1/4 cup, 0.5 oz
  • Mint, 1/4 cup, 0.5 oz
  • Chives, 1/4 cup, 0.5 oz

Equipment:

  • Food processor
  • Grater
  • 1 large mixing bowl
  • 1 large pot, 3-4 quarts
  • 1 medium pot, 2 quarts with a lid. Non stick preferred but not required
  • 1 medium to large-sized frying pan with a lid. Non stick preferred but not required
  • 1 clean kitchen towel

Prep list:

Rice:
  • soak 2 cups of basmati rice for at least 1 hour
  • Bring 8 cups of water to a boil
Kuku
  • Boil and cook 1 medium-sized Yukon gold potato. Peel and grate
  • Grate 1 small yellow onion
In the food processor:
  • Ground 1 cup of walnuts
  • Chop 1/2 cup fresh parsley
  • Chop 1/4 cup fresh dill
  • Chop 1/4 cup mint
  • Chop 1/4 cup chives
